Meet Joe Schwab
Joe Schwab’s love for the specialty food world began as a barista in high school, learning a passion for customer service that would be a consistent theme in his life. In college he was able to learn about another interest, coffee roasting, at Redband Coffee Company in Davenport, Iowa as well as becoming certified as a craft roaster and barista by the Specialty Coffee Association of America.
While attending University of Iowa he studied film and linguistics, including graduating with a major in Spanish as well as a focus in Italian. Upon moving to Denver, Joe got back into coffee when he started working for Corvus Coffee Roasters.
A love of travel grew very early in life from his parents Mark and Deanna. They have been all over the world, but have spent a lot of their time abroad in Europe, often with young Joey traveling along. This led to a passion for traveling, especially in Spanish speaking parts of the world, where he has been able to visit coffee farms, learning to appreciate the craft and hard work that goes into specialty food products.
Joe stumbled upon the Truffle Cheese Shop shortly after a honeymoon in Paris and was helped by his now business partner Janet Schaus. He fell in love with the Truffle and quickly applied for a a Cheesemonger position when an opening came up in 2013 and has been there since. To further his cheese knowledge, he has traveled to many cheese shops and dairies around the world, including touring the cellars of Neal’s Yard in London and the Isle of Mull dairy in Scotland.
When not at the cheese shop, you can most likely find Joe playing disc golf, golfing, or skiing. He lives in Washington Park with his wife of 5 years Kelsey and black cats Indiana Jones and Han Solo, who are all very excited for this next big step in life.
