The Salumeria Biellese is our primary source for cured meats. They have been making salumi and old world specialties in Manhattan since 1925. They took the USDA to court in 2003 for the right to continue to produce salumi the way their grandfathers had, with the traditional salt curing process that does not involve heat or any cooking. They proved to the court that through fermentation and salt curing, their salamis were as safe as those that are irradiated or cooked. Today they are one of the few producers left in the United States that makes salami in this traditional way. The Salumeria Biellese only uses hormone free Eden Natural certified Berkshire hogs.
