Most of the producers that we buy our cheeses from are the artisan and farmstead cheesemakers of the world. A farmstead cheese is one that is made on the farm where the animals are raised. By focusing on the smaller producers and seasonal quality, we are supporting the family farms and the artisans who we would like to see more of. Many of these extraordinary cheeses are rarely found elsewhere.

Many people do not realize that cheese, like fruits and vegetables is a seasonal food. In the late spring, summer and early fall, there are green grasses and herbs for the animals to eat and their milk is richer, more prolific and flavorful. This is the best time of the year for young cheeses.
