Meet the owners & staff of The Truffle

Robert Lawler has been cooking in restaurants for over 13 years. Professionally trained at San Francisco's California Culinary Academy, Rob has worked for some of the best chefs in the country. From Albert Tjordman at the Flying Saucer in San Francisco to John Platt, Frank Bonnano, Jennifer Jasinski and John Broening here in Colorado, Rob is passionate about food and excited to be a new owner of Denver's best cheese shop.

Karin Lawler has been working as a server in restaurants for over 10 years. Currently the bar manager and wine buyer for Potager Restaurant, she has also worked at Clair de Lune in Denver and Q's Restaurant in Boulder. She brings her love of food and wine pairings to The Truffle.

Jim Arnold has been a part of The Truffle for over 3 years. A graduate of the Culinary School of the Rockies, Jim has concentrated his passion for great cuisine into the domain of artisan cheeses. Jim manages the shop as well as conducts off-site cheese classes and functions for The Truffle. In addition to our monthly cheese and wine pairing, The Truffle is looking forward to hosting several special events throughout the year.
